So after having been ill for more than a week I've finally been able to set about some Christmas cookie baking. Here the fruits of my recent efforts: Lemon Pepper Cookies and Ginger Spice Cookies, neither too sweet and both with a refreshing spiciness. The lemon cookies were pleasingly gritty, and while I didn't achieve the cracked effect I was expecting with the latter (perhaps because I had to scratch the crystallized ginger, an ingredient not native to this country), they still had an unctuous chewiness I found quite satisfying. Inexplicably, though I measured (!) the ginger balls before arranging them on the baking tray, I ended up with only 18 rather than the promised 30...
